Like wine, coffee comes from all corners of the world. Soil, climate, and processing methods are all influencing factors that define a region’s unique coffee brand. One of the largest coffee producers in Indonesia, which has been producing and exporting distinctive and delicious coffee for centuries. Coffee Regions in Sumatra
Sumatra is not only the largest island in Indonesia but also the sixth-largest island in the world. It lies in the northwest region of Indonesia. Due to its location, Sumatra has the earliest harvest season in the country – November to March.
Sumatran coffee is one of the most popular coffee varieties on the planet. Sumatra offers a low acidity and a complex flavor profile that many coffee enthusiasts describe as earthy, soft, and chocolatey. There are several factors that influence the taste of Sumatra coffee. First, the island’s fertile volcanic soil is associated with the earthy taste of the coffee. In terms of low acidity, the most important factor is the Sumatran coffee process, which is called wet milling.
At the beginning of the wet milling process, the farmer removes the outer layer of the coffee fruit to take the coffee beans. The beans are then soaked in water and laid out to dry. The beans are transported to a mill which continues to dry. After that, workers put the seeds through a grinding machine to remove the parchment shells.
Once the parchment layer comes off, the coffee beans are about 35% humidity. The moisture percentage must be below 12%, so farmers allow the beans to dry in the sun until they reach that level. Sumatra is one of the few places that take advantage of this process, making coffee even more unique and in demand.
Coffee Regions in Java
If you love coffee as much as we do, you probably know that java is synonymous with coffee. What you may not know is that Java is the island in Indonesia where some of the world’s best coffee is made. Thank you to the Dutch East India Company for bringing arabica coffee plants to Indonesia in the 17th century.
Most of the Javanese coffee is grown on five government-owned plantations: Blawan, Tugosari, Pancoer, Jampit, and Kayumas. All of these plantations are located on the Ijen Plateau about 1,300 meters. However, in recent years, smallholder plantations in Java have produced high-quality coffee, providing consumers with more choices.
Javanese coffee goes through the coffee washing process. This method gives the coffee a cleaner and sweeter taste compared to the earthier taste of Sumatra. Javanese coffee is also known for its low acidity, whole body, and aroma of molasses, cloves, and figs.
Coffee Regions in Sulawesi
Formerly known as Celebes, Sulawesi has six different provinces. South Sulawesi, one of these provinces, is where most of Sulawesi’s coffee is grown, particularly in the Toraja highlands on smallholder plantations. These farmers mostly use the wet milling method, but some of them wash the coffee beans thoroughly. Because Toraja is a mountainous area, it is possible for coffee to be grown at a higher altitude than the islands in Indonesia.
Altitude up to 6,000 feet above sea level – helping to provide a cleaner, smoother coffee finish. When compared to other Indonesian coffees, Sulawesi tends to have a light spectrum. However, it’s still a strong, bold variation with low acidity and creamy texture. The aroma is nutty and chocolatey, while fruity flavors, dark chocolate, and spices like cinnamon and cardamom are added.
Coffee Regions in Flores
Compared to other islands in Indonesia, Flores is relatively small, stretching 200 miles from end to end. The island is famous for its rich vegetation and is one of the few places where you can see the endangered Komodo Dragons. However, the coffee remains the foundation. Most of the coffee grown in the city of Bajawa is at an altitude of 1,200 to 1,800 meters.
The dust from volcanic eruptions has created fertile andosols, which are suitable soil for organic coffee production. Farmers in Flores take advantage of the wet milling process. This method, combined with the location in Flores, gives the coffee a bar of sweet, milky chocolate with a floral, woody, syrupy aroma.
Coffee Regions in Bali
Bali is famous for its beautiful beaches, coral reefs, and yoga and meditation retreats. This tropical paradise provides some of the best coffee Indonesia – and the world – has to offer. The majority of coffee is grown on the Kintamani highlands, which are located between the Batukaru and Agung volcanoes. Just like in Flores, volcanic ash helps to keep the soil fresh for growing high-quality coffee plants.
Most of the farmers use the washing process for coffee beans. This gives the coffee a strong body without tasting too bitter. Flowers, lemons, chocolate, and walnuts are the signature notes of Balinese coffee.
